Very easy and very delicious. I was surprised, probably because I spend a lot of money on nice storebought granola and I thought this was better. First cracks at recipes don't usually work out that well for me. Anyway,

In a bowl, combine:
2 cups oats
1 cup shredded coconut
3/4 cup sliced almonds
1/8 cup chia seeds

In a separate dish, combine:
1/3 cup avocado oil
1/3 cup maple syrup
1 tablespoon vanilla extract

Microwave wet ingredients for about 30 seconds, then whisk together. Combine wet and dry ingredients, spread the mix out on a parchment paper-lined baking sheet, and bake at 275 F for 45 minutes. After baking, stir in 1 cup of raisins. Jar and enjoy.

Interesting. Maple syrup instead of honey. I suppose any sugar source would work.
