I wonder how much of that would apply to beef burgers. Obviously adding more fat isn't needed if you just buy the right level. Is adding gelatin to a beef burger wrong?

Grok approves:

Yes, adding gelatin can improve a beef burger. It helps retain moisture, creating a juicier texture, especially for leaner cuts. Mix 1-2 tsp of unflavored gelatin (dissolved in a little water) per pound of ground beef. Form patties gently and cook as usual. Enhances juiciness without altering flavor.

It says the soy sauce and baking soda can improve beef too.

Btw I tried to try this turkey burger recipe yesterday but I realized the only ingredient I had on hand was the baking soda. I didn’t want to go to the store so I just added that, and surprisingly, even the one addition made it noticeably better.
