I read about this a couple years ago. Before that I've eaten rice left out for days with no issue. I know that's common in Asian cultures as well. I think the risk here is maybe overblown. Also I think you can tell when the rice goes bad, by smell or if it gets watery. I'm no health expert so better safe than sorry. Just my own personal experience.

I've reheated rice thousands of times. Rice that's been left out for hours, overnight even. I read about this a couple years ago and starting putting cooked rice in the fridge right away but I suspect this is not that common an issue. Asians have rice cookers that keep rice just above room temperature for a couple days so I dunno.

From a different extreme perspective, meat is just meat. Leave it out for a few weeks and it's still meat. You can cook it and eat it - but I wouldn't advise it. The difference is that the temperature, bacteria, and other things have chemically changed from good meat to bad meat.

The only constant is change - until the cold death of the Universe, and probably not even then.

I'm pretty bad about that. I figure bread doesn't go bad instantly. Neither does cheese. The sauce is the worrysome part. And it's has a fatcap of cheese and was sanitized by heat. The edges of the sauce are exposed so that's the mode of failure, but it should hold up for a day. So if pizza gets left out I'm eating it in the morning.

The sauce is likely to be highly acidic. I think that helps.

I have, too, but there is always that chance. It sounds like people who have died or become severely ill have eaten food that has been left out and then refrigerated for more than 4 days.

The acids in your stomach should kill it. If it's left out 4 days it'll look moldy and smell and taste bad so you might not eat it unless covid killed your taste buds or something.

I think this fried rice syndrome is something the Chinese put in their rice on purpose. They bleach rice, wtf.

What the video talks about is a toxin created by the bacteria. Even if they are killed by heat or stomach acid the toxin remains.
