I'm asking for a friend. Someone I know picked up a large catering tray of leftovers from a church function, 4th of July breakfast, that was destined to get thrown out. Apparently there was some confusion about what was in it. Maybe that would have been a better destination.
The result is that this person I know has way way to many onions. They are about 1/8th of the way through being carmalized. Clearly a carmalization attempt was applied to these onions already. But the most important detail is the sheer scale.
Of course tossing them is a perfectly good option. But maybe they can be salvaged for something useful. What would you do with a large tray of cooked (though not very cooked) onions?
You can pickle them, if they were raw I'd say plant them for spring onions, but probably far too cooked for that.
Soup?
I thought about soup. That will also be a lot of soup. But I guess I can freeze that.
French onion soup is good.
