I don't know why. But they sell it in this box with a label sealed to the top that is perfectly adhere'd to the box. You have to cut the top. It's not resealable. It's full of liquid that is liable to go everywhere if not sealed. It's a solid/wet product. It's not the only solid/wet product in the grocery store, yet every other thing can be sold more reasonably. Why not in a tub like cottage cheese? Or a clam shell? So many better options.
I think it just boils down to cost-effectiveness. Tofu bricks in plastic packaging fit nicely and tightly in a cardboard box with little space lost which ultimately saves money on shipping. It's a cheap product in a competitive market. The brine in the packaging is a by-product of the transformation process. What I usually do is transfer the tofu into a tupperware container with water. Just change the water daily to keep the tofu fresh
What I've been doing is storing it in the original tub within a plastic zip-lock. I should be better at re-using the zip lock for at least a few, but I don't and it feels wasteful.
I want to get a ton of produce bags. Those things are OP and they don't get used for anything but produce.
